Paul’s in the hot seat as he takes over at Ashridge’s haute cuisine kitchen

The new head chef at Grade I-listed Ashridge House moves into his new post after having served up dishes in Monaco, Cape Town, Malta –and at the London Olympics.

Irish-born Paul Patterson, a member of the Master Chefs of Great Britain, is a regular competition contestant as well as appearing on radio and TV.

He previously worked at Ashridge House to help train staff and develop menus.

He said: “I want to inspire our team to create menus that leave visitors with enjoyable and lasting memories. I want our team to stretch their boundaries to explore the food we have coming into the kitchen.

“For any kitchen now, sustainability is key, staff must constantly look for ways to minimise food wastage, air miles and become as self-sufficient as possible.

“At Ashridge we are adopting and developing culinary practices that are healthy for the planet as well as people.”

He will use herbs from the Ashridge gardens, honey from the Ashridge Estate and showcase produce from the area’s farmers on his menus.

Ashridge House hospitality director Anna Brown said: “Paul is an extremely dynamic chef, with a real passion for food and wide-ranging culinary expertise.

“He is also demanding about finding the best local ingredients to use in his unforgettable menus. I am sure that the exquisite dishes he prepares will delight our customers.”

Paul succeeds Erick Moboti, who is now working alongside the government in the Congo Republic.
